It has been a while since I posted, and I am trying to blog more consistently for my EN & Stilettos Mag. It is soo important to focus on solutions and the things you can change NOW. That is what I have been doing. Your attention and what you focus on the longest will become the strongest energy you put out. The best way to deal with challenges that come up is to look for doable solutions. Spend more time looking to be creative, tap into resources and get/ask for help. Worry is said to be faith turned upside down. Pessimism and assuming the WORSE, is a waste of time and energy and ultimately helps you solve nothing. Like a friend said, use your imagination to come up with simple, varieties of approaches to move your life forward.

Zucchini Ribbon Pasta

Here is a delicious recipe to help you pack more  fresh veggies in your diet, including zucchini, avocado, and ribbon pasta.

It can be served hot or cold and it’s loaded with spring vegetables, a tangy lemon dressing, creamy goat cheese plus pine nuts for an added crunch.

Yields 3-4 servings

Ingredients:

  • 8 ounces fusili or other pasta of choice
  • 3 TSBP olive oil
  • Zest of 1 lemon
  • 2 TBSP freshly squeezed lemon juice
  • 1/2 tsp oregano
  • 2 zucchini, trimmed and halved lengthwise
  • 1 avocado, halved, seeded, peeled and diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup crumbled goat cheese or feta
  • 2 TSBP chopped fresh parsley leaves
  • 2 TBSP pine nuts
Directions:In a large pot of boiling salted water, cook pasta according to package instructions; drain well.In a small bowl, whisk together olive oil, lemon zest, lemon juice and oregano; set aside.

Using a mandoline or vegetable peeler, shave zucchini into long wide ribbons.

In a large bowl, combine pasta, zucchini ribbons, avocado, cherry tomatoes, goat cheese, parsley, pine nuts and olive oil mixture.

Serve immediately.
